Description

The beauty of this recipe lies in its versatility; you can easily add seasonal veggies like green beans or Brussels sprouts for an extra pop of color and nutrition.

Ingredients

Scale

For the Chicken:

  • 4 pounds bone-in, skin-on chicken thighs (about 810 pieces)
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic (approximately 34 cloves)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried Italian herbs (oregano, basil, and thyme blend)
  • 1 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

For the Potatoes:

  • 3 pounds baby potatoes (about 2 pounds halved and 1 pound quartered)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional for a hint of heat)

Optional Add-ins and Variations:

  • 1 cup cherry tomatoes (halved) for added freshness and color
  • 1 cup green beans, trimmed, for a crunchy vegetable side
  • 1 teaspoon lemon zest, for a citrusy twist
  • 1/2 cup of sliced bell peppers, which can add sweetness and flavor
  • For a richer flavor, substitute the Parmesan with Pecorino Romano cheese.

Suggested Seasonings:

  • Fresh rosemary or thyme sprigs, added during cooking for aromatic flavor.
  • For a savory kick, consider incorporating some Dijon mustard into the chicken rub.
  • A splash of balsamic vinegar can enhance the overall taste profile of the dish.

Instructions

Gather your ingredients

Start by collecting all necessary ingredients. You will need chicken thighs or breasts, baby potatoes, garlic, olive oil, grated Parmesan cheese, fresh parsley, salt, and black pepper.

Preheat your oven

Preheat your oven to 400°F (200°C). This ensures even cooking and helps achieve a crispy finish.

Prepare the chicken

Take your chicken pieces and pat them dry with paper towels. This step is crucial to ensure a nice sear.

Season the chicken

In a large bowl, mix together olive oil, minced garlic, salt, and pepper. Add the chicken to the bowl and coat it thoroughly with the seasoning mixture. Let it marinate for about 15-20 minutes for enhanced flavor.

Prepare the potatoes

While the chicken marinates, wash the baby potatoes and cut them in half. This allows for better roasting and enhances texture.

Combine chicken and potatoes

On a large baking sheet, arrange the marinated chicken pieces in the center. Surround the chicken with the halved baby potatoes, ensuring even distribution.

Add Parmesan cheese

Sprinkle grated Parmesan cheese evenly over both the chicken and potatoes. This will create a delicious, cheesy crust as it bakes.

Bake the dish

Place the baking sheet in the preheated oven. Bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.

Check for doneness

After baking, check the chicken and potatoes. If needed, you can broil for an additional 2-3 minutes to achieve an extra crispy topping.

Garnish and serve

Once the dish is fully cooked, remove it from the oven. Garnish with freshly chopped parsley for a pop of color and flavor. Serve immediately and enjoy your flavorful Garlic Parmesan Chicken and Potatoes!

Notes

Any seasonings can really be used in this recipe. I like to keep it simple with salt, pepper, garlic powder, and paprika.

I used Beef Kielbasa sausage, but you could make them healthier by using turkey or chicken sausage.
