  • 4 tbsp unsalted butter
  • 2 tbsp olive oil

  • 1/2 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 1/4 cup chicken broth (or vegetable broth)
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 1 tsp lemon zest
  • 1/4 tsp red pepper flakes (optional, for a bit of heat)
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley (for garnish)

For Serving:

  • Cooked pasta (such as linguine or fettuccine)
  • Crusty bread or garlic bread

Instructions

1. Prepare the Shrimp

  1. Pat Dry: Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Cook the Shrimp: In a large skillet, heat 1 tbsp butter and 1 tbsp olive oil over medium-high heat. Add the shrimp and cook for 1–2 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside.

2. Make the Garlic Butter Sauce

  1. Sauté the Garlic: In the same skillet, add the remaining butter and olive oil. Add the minced garlic and sauté for 1–2 minutes, until fragrant.
  2. Deglaze the Pan: Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Let the mixture simmer for 2–3 minutes to reduce slightly.
  3. Add Lemon: Stir in the lemon juice, lemon zest, and red pepper flakes (if using). Season with salt and pepper to taste.

3. Combine and Serve

  1. Return the Shrimp: Add the cooked shrimp back to the skillet and toss to coat in the sauce. Cook for an additional 1–2 minutes to heat through.
  2. Garnish: Sprinkle with chopped parsley.
  3. Serve: Serve the shrimp scampi over cooked pasta or with a side of crusty bread.

Notes

  1. Use Fresh Shrimp: Fresh shrimp have the best flavor and texture. If using frozen, thaw them completely and pat them dry before cooking.
