Instructions
Begin by bringing a large pot of water to a rolling boil over high heat.
Once the water is boiling, add the ramen noodles to the pot.
Cook the noodles according to the package instructions, usually around 3-4 minutes, until al dente.
Once cooked, drain the noodles in a colander and rinse them briefly under cold water to stop further cooking.
In a separate bowl, mix together soy sauce, sesame oil, and a dash of chili sauce for a little kick.
Add minced garlic and grated ginger to the bowl, stirring the mixture until combined.
Adjust the sauce consistency by adding water, one tablespoon at a time, until it reaches your desired thickness.
Heat a tablespoon of cooking oil in a large skillet over medium heat.
Once the oil is hot, add your choice of diced vegetables: bell peppers, carrots, and scallions work well.
Sauté the vegetables for about 3-5 minutes until they soften but still maintain some crunch.
Lower the heat and add the drained ramen noodles to the skillet with the sautéed vegetables.
Pour the prepared sauce over the noodles, tossing everything gently to combine.

Notes
