Start by collecting all essential ingredients. You will need cooked rice (preferably chilled), eggs, soy sauce, vegetable oil, and some chopped green onions or peas for added flavor. Having everything ready simplifies the cooking process.
Place a non-stick skillet or wok on medium-high heat. Add about 2 tablespoons of vegetable oil. Allow the oil to heat until it glistens to ensure a good sear on the ingredients.
Crack 2 large eggs into a bowl and whisk them together. Once the oil is hot, add the eggs to the pan. Stir continuously until the eggs are fully cooked and fluffy, about 1 to 2 minutes. Remove them from the pan and set aside.
