Description

These spicy chili garlic noodles are ready in about 15 minutes and FULL of flavor. They’re gluten free and vegan but delicious with some extra stir fried veggies and your choice of protein!

Noodles and Base Ingredients

  • 4 cups all-purpose flour (or use 3 cups for a firmer noodle)
  • 1 cup water, room temperature
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil (for the dough)
  • 1 tablespoon sesame oil (for flavor)

Chili Garlic Sauce

  • 1/4 cup vegetable oil (for sauce preparation)
  • 10 cloves garlic, finely minced
  • 56 tablespoons chili paste (adjust based on heat preference)
  • 1 tablespoon soy sauce (for umami)
  • 2 tablespoons rice vinegar (for tanginess)
  • 1 tablespoon sugar (to balance flavors)

Vegetables

  • 1 medium bell pepper, sliced (any color)
  • 2 cups snap peas or snow peas, trimmed
  • 1 cup green onions, chopped (use both white and green parts)
  • 1 cup shredded carrots (adding color and crunch)

Garnishes and Extra Flavorings

  • 1/4 cup sesame seeds, toasted (for crunch)
  • Fresh cilantro, chopped (for a refreshing touch)
  • 1 lime, cut into wedges (for serving)

Instructions

Step 1: Prepare the Knife-Cut Noodles

Start by preparing the dough. In a mixing bowl, combine 2 cups of all-purpose flour and a pinch of salt.

Gradually add 3/4 cup of warm water to the flour mixture.

Knead the dough until smooth and elastic, about 10 minutes.

Cover the dough with a damp cloth and let it rest for 30 minutes.

Step 2: Cut the Noodles

After resting, roll out the dough into a thin rectangle on a floured surface.

Use a sharp knife to cut the dough into strips, about 1/4 inch wide.

Dust the cut noodles with flour to prevent sticking.

Set aside while you prepare the sauce.

Step 3: Make the Chili Garlic Sauce

In a bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of chili oil, and 1 teaspoon of sugar.

Finely mince 3 cloves of garlic and add them to the sauce mixture.

Add a pinch of freshly cracked black pepper for added flavor.

Step 4: Cooking the Noodles

Bring a large pot of water to a rolling boil. Add a generous pinch of salt to the water.

Drop the prepared knife-cut noodles into the boiling water.

Cook them for 2-3 minutes, or until they are tender but still chewy.

Once they are cooked, drain the noodles using a colander and quickly rinse them under cold water to stop the cooking process.

Step 5: Combine Noodles and Sauce

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat.

Add the cooked noodles to the skillet and stir-fry for 1-2 minutes.

Pour in the chili garlic sauce and toss the noodles to ensure they are evenly coated.

Cook for another 1-2 minutes, allowing the flavors to meld.

Step 6: Serve and Garnish

Transfer the Chili Garlic Noodles to a serving plate.

Garnish with chopped green onions and sesame seeds for an added crunch.
