Ingredients

Scale

For the Buffalo Chicken Filling:

  • 2 cups cooked chicken, shredded (about 23 medium-sized chicken breasts)
  • 1/2 cup buffalo sauce (adjust according to heat preference)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Flatbread Base:

  • 4 to 6 pieces of flatbread (store-bought or homemade, about 810 inches in diameter)
  • 1 tablespoon olive oil (for brushing)

For the Cheese and Toppings:

  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled blue cheese (optional, for an extra flavor kick)
  • 1 cup fresh spinach leaves or arugula (for added color and nutrition)
  • 1/4 cup thinly sliced green onions (for garnish)
  • 1/4 cup chopped fresh cilantro or parsley (for garnish, optional)

For Optional Dipping Sauce:

  • 1 cup ranch dressing or blue cheese dressing
  • 1 tablespoon fresh lemon juice (optional, for zest)

Variations and Alternative Ideas:

  • For a spicier kick, consider adding diced jalapeños or chopped chili peppers to the chicken mixture.
  • If you want a protein-packed vegetarian option, replace the chicken with grilled cauliflower or chickpeas, and use a vegan buffalo sauce.
  • Experiment with different cheeses like pepper jack or gouda for a unique twist on the flavor profile.
  • For an Asian-inspired take, swap out the buffalo sauce for a sweet chili sauce and add shredded carrots and scallions on top.
  • If gluten-free, opt for gluten-free flatbread or cauliflower crust.

Instructions

Make this delicious Buffalo Chicken Flatbread in just a few simple steps. Start by gathering all your ingredients to ensure a smooth cooking process.

Step 1: Prepare the Chicken

Begin by cooking the chicken. You can either grill, bake, or boil two chicken breasts until they are fully cooked. This usually takes about 20 to 30 minutes depending on your method.

Once cooked, allow the chicken to cool for a few minutes. Then, shred the chicken using two forks or chop it into small pieces.

Step 2: Create the Buffalo Sauce

In a medium bowl, combine ½ cup of hot sauce with 2 tablespoons of melted butter. Stir well until the butter is fully incorporated into the sauce.

Add the shredded chicken to the bowl and mix thoroughly until the chicken is evenly coated with the Buffalo sauce.

Step 3: Prepare the Flatbread Base

Preheat your oven to 400°F (200°C). While it heats, prepare the flatbread. You can use store-bought flatbread or make your own using pizza dough.

If using pizza dough, roll it out on a lightly floured surface to your desired thickness, about ¼ inch thick works well.

Step 4: Assemble the Flatbread

Spread a thin layer of ranch or blue cheese dressing over the flatbread. This will add creaminess and balance the spice from the Buffalo sauce.

Evenly distribute the Buffalo chicken mixture over the dressing-coated flatbread.

Step 5: Top with Cheese

Sprinkle 1 cup of shredded mozzarella cheese over the top of the chicken. You can also add crumbled blue cheese for extra flavor, if desired.

Step 6: Bake the Flatbread

Carefully place the assembled flatbread on a baking sheet lined with parchment paper. Bake in the preheated oven for 10 to 12 minutes, or until the cheese melts and begins to bubble.

Step 7: Finishing Touches

Once out of the oven, let your flatbread cool for a minute. Before serving, drizzle a little more hot sauce on top and add chopped green onions for freshness.

Slice the flatbread into manageable pieces and enjoy your homemade Buffalo Chicken Flatbread!

Notes

I’m morally opposed to blue cheese (ok, an exaggeration but I don’t like it mmmkay?) BUT, I do know that blue cheese pairs well with buffalo wings so if you are a blue cheese lover you should add a sprinkle!
