- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
For the Brown Sugar Filling:

For the Frosting and Toppings:
- 2 cups powdered sugar
- 2 tablespoons milk (more as needed for consistency)

- ½ teaspoon cinnamon (optional for added flavor)
- Sprinkles (optional, for decoration)
Variations and Alternative Ingredients:
- For a nutty flavor, consider adding ½ cup finely chopped pecans or walnuts to the cookie dough.
- If you enjoy chocolate, mix in 1 cup of mini chocolate chips into the cookie dough for a delightful twist.
- Replace part of the all-purpose flour with whole wheat flour (up to 1 cup) for a healthier option.
- Swap the vanilla extract with almond extract for a different aromatic profile.
- To create seasonal variations, feel free to incorporate 1 teaspoon of pumpkin spice or gingerbread spice in the filling for a holiday vibe.
To ensure the best flavors, always use fresh ingredients, particularly for the spices and baking powder. Whichever variations you choose, these additions can complement the rich, sweet notes of the brown sugar and create a unique cookie experience for your guests.
Instructions
- Gather your ingredients
Start by assembling all necessary ingredients. You will need flour, brown sugar, butter, eggs, vanilla extract, baking powder, and salt. Make sure to have frosting and sprinkles ready for decoration. - Preheat the oven
Set your oven temperature to 350°F (175°C). Preheating is essential for ensuring even baking of your cookies. - Mix dry ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. Whisk these together until fully blended. This step helps in evenly distributing the baking powder and salt into the flour. - Combine wet ingredients
In another bowl, cream 1 cup of softened butter and 1 cup of brown sugar together. Beat them until light and fluffy. This process helps to incorporate air, giving your cookies a lighter texture. - Add eggs and vanilla
Next, add 2 large eggs and 1 teaspoon of vanilla extract to the butter mixture. Mix on low speed until well integrated. Ensure there are no lumps of butter left in the mix. - Incorporate dry ingredients
Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined. Do not overmix, as this can result in tough cookies. - Use your hands to form the dough into small balls, about 1 tablespoon each. Place them evenly spaced on a lined baking sheet. Flatten each dough ball slightly for uniform baking.
- Transfer the baking sheet to the preheated oven. Bake for approximately 10-12 minutes, or until the edges turn golden brown. Keep an eye on them to avoid overbaking.
- Cool and decorate
Once baked, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Transfer them to a wire rack to cool completely. After cooling, frost each cookie and add sprinkles on top for extra flair.
Notes
All-purpose flour
I highly recommend using cake flour for best results, the cookies will be softer and more tender this way. However, if you must substitute cake flour you would use 3 ⅔ cup (450g).
